MostingredientsWaterscouldfindwerefromindustrialfarms.TheytastedtotallydifferentfromtheonesherparentsplantedduringWorldWarIIandtheonesshehadenjoyedinFrance.Thusshebeganasearchforsupplierswhowouldgrowgoodingredients.
“Iwaslookingfortaste.AndIcouldn’tfindtasteuntilImetthelocalorganicfarmerswhoweregrowingvegetablesforflavor,”Watersrecalls.“IrealizedthatIwouldbedependentonthemforthesuccessofmyrestaurant.”
Atfirst,thefinanceswereadisaster.Ifanyoftheingredientsdidn’ttasteright,chefsthrewthemout.Staffhadtotastethewinetosellit.Thatmeantthousandsofdollarsofwinedisappearedonaregularbasis.Peoplewhoofferedingredientsweregivenmealsintrade.
ButChezPanissehadlinesoutofthefrontdoorfromtheveryfirstnight.Waters’senseoftasteandherdedicationtomakingthebestfoodpossiblekeptpeoplecomingback.Itdidn’ttakelongforChezPanissetocatchtheattentionoffoodies(“吃货”).Throughoutitsexistence,therestauranthasearnedthehighestpraiseofmanycritics.IthassometimesbeencalledthebestrestaurantinAmerica.
Now72,Watersisnotcontentwithstayingathomeandcookinginherkitchen.LastSeptember,sheflewtoWashingtonD.C.,tomeetmembersofCongresstodiscussthebenefitsoffreelunchforallschoolchildren.
ManypeoplehavecalledWatersunrealisticoverthecourseofher45-yearfightforgoodfood.Nevertheless,hersingle-mindednessendedupsparkingafarm-to-tablemovement.“Shedidn’tstartChezPanissetochangetheworld,”saidMarionNestle,aNewYorkUniversitynutritionprofessor.“Butwhatshedidwasabsolutelyrevolutionary.She’saforceanddeserveseverybitofrecognitionthatcomesherway.”
