MostingredientsWaterscouldfindwerefromindustrialfarms.TheytastedtotallydifferentfromtheonesherparentsplantedduringWorldWarIIandtheonesshehadenjoyedinFrance.Thusshebeganasearchforsupplierswhowouldgrowgoodingredients.

“Iwaslookingfortaste.AndIcouldn’tfindtasteuntilImetthelocalorganicfarmerswhoweregrowingvegetablesforflavor,”Watersrecalls.“IrealizedthatIwouldbedependentonthemforthesuccessofmyrestaurant.”

Atfirst,thefinanceswereadisaster.Ifanyoftheingredientsdidn’ttasteright,chefsthrewthemout.Staffhadtotastethewinetosellit.Thatmeantthousandsofdollarsofwinedisappearedonaregularbasis.Peoplewhoofferedingredientsweregivenmealsintrade.

ButChezPanissehadlinesoutofthefrontdoorfromtheveryfirstnight.Waters’senseoftasteandherdedicationtomakingthebestfoodpossiblekeptpeoplecomingback.Itdidn’ttakelongforChezPanissetocatchtheattentionoffoodies（“吃货”）.Throughoutitsexistence,therestauranthasearnedthehighestpraiseofmanycritics.IthassometimesbeencalledthebestrestaurantinAmerica.
