Dr.RichardBrunoisabionutritionistandregistereddietitianwithexpertiseintheareasofphytochemicalandantioxidantutilizationandmetabolisminrelationtofreeradical-mediatedtoxicology.Theresearchconductedinhislaboratoryaimstodefinethemechanismsregulatingthebioavailabilityofphytochemicals,particularlyvitaminEandpolyphenols,andthemechanismsbywhichthesedietaryagentsprotectagainstoxidativestressandpro-inflammatoryresponsesthatotherwisecontributetovascularendothelialdysfunctionandnonalcoholicsteatohepatitis(NASH).Hisworkroutinelyutilizesobeseexperimentalmodelsandclinicalpopulationshavingheightenedoxidativestressandinflammatoryresponseswiththeunderlyinggoaloftranslatingexperimentalfindingsintopracticalrecommendationsthatpromoteoptimalhealthinhumans.
Atpresent,studiesledbyhislaboratoryaredirectedat:
1Improvingthebioavailabilityofquercetinusingdietarymanipulationsandquercetin-nanoemulsions,
2Definingα-tocopherolbioavailabilityanddietaryrequirementsinindividualswithmetabolicsyndrome,
3Identifyingtheantioxidantandanti-inflammatorymechanismsofgreenteaduringNASH,
4Definingthevasoprotectiveactivitiesofγ-tocopherolsupplementationduringsmokingcessation,and
5Determiningthevasoprotectiveactivitiesofdairyingestioninindividualswithmetabolicsyndrome.
